PREPARATION
Preheat your oven to 400°F and line a large baking sheet with parchment paper for easy cleanup.
In a small bowl, whisk together the raw honey, tamari, minced garlic, and half of the olive oil to create the glaze.
Place the chicken breast on one side of the baking sheet and season both sides with sea salt and black pepper.
In a separate bowl, toss the broccoli florets and sliced carrots with the remaining olive oil and a pinch of salt.
Spread the vegetables in a single layer on the other side of the baking sheet.
Brush half of the honey-garlic glaze generously over the chicken breast.
Roast in the oven for 20 to 25 minutes, brushing the remaining glaze onto the chicken halfway through the cooking time.
