While the potatoes roast, combine the ground turkey with the garlic powder, onion powder, and the remaining sea salt and black pepper in a bowl.
Form the turkey mixture into two small patties and cook them in a non-stick skillet over medium heat for 5 to 6 minutes per side until fully cooked.
Assemble the bowls by placing a base of baby spinach in each dish and topping with the roasted sweet potatoes, halved cherry tomatoes, and diced red onion.
Place the turkey patties on top of the greens, garnish with sliced avocado, and drizzle with yellow mustard before serving.
