Coffee-Rubbed Steak with Roasted Asparagus
Pan-seared sirloin steak coated in a bold, smoky coffee rub served alongside crisp-tender roasted asparagus for a savory and energizing meal.
INGREDIENTS
6 oz Top sirloin steak
1.5 cups Asparagus spears
1 tbsp Avocado oil
1 tbsp Finely ground coffee
1 tsp Smoked paprika
0.5 tsp Garlic powder
0.25 tsp Onion powder
0.5 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 400°F (200°C).
In a small bowl, whisk together the finely ground coffee, smoked paprika, garlic powder, onion powder, sea salt, and black pepper.
Pat the steak dry with a paper towel and coat it with 0.5 tbsp of avocado oil.
Press the coffee spice mixture firmly onto all sides of the steak to create a thick, even crust.
Arrange the asparagus on a baking sheet and drizzle with the remaining 0.5 tbsp of avocado oil.
Roast the asparagus in the oven for 12-15 minutes until it is tender and slightly charred.
While the vegetables roast, heat a cast-iron skillet over medium-high heat until it is very hot.
Sear the steak for approximately 4 minutes per side for a medium-rare finish or until it reaches your preferred doneness.
Transfer the steak to a cutting board and let it rest for 5 minutes before slicing against the grain to serve.
