120 g Chicken breast
40 g Chickpeas
100 g Baby spinach
50 g Roma tomato
30 g Red onion
2.5 g Olive oil
2 g Garam masala
1 g Turmeric powder
1 g Cumin powder
1 g Sea salt
0.5 g Black pepper
5 g Fresh ginger
5 g Garlic
10 g Fresh cilantro
PREPARATION
Dice the chicken breast into small cubes and toss with the turmeric, cumin, sea salt, black pepper, and half of the garam masala.
Place a large non-stick skillet over medium heat and add the olive oil.
Add the red onion, minced ginger, and garlic to the pan and sauté for 3 minutes until the onion is translucent and fragrant.
Increase the heat slightly and add the seasoned chicken, cooking for 5 to 7 minutes while stirring frequently until the chicken is browned and cooked through.
Stir in the chickpeas and diced tomatoes, cooking for another 2 minutes until the tomatoes begin to soften and release their juices.
Add the baby spinach and the remaining garam masala to the skillet, tossing gently for 1 minute until the spinach is just wilted.
Transfer the mixture to a bowl and garnish with fresh chopped cilantro before serving.
