INGREDIENTS
5 oz Ground turkey
1 oz Chickpea ziti
0.5 cup Marinara sauce
1 tbsp Part-skim ricotta cheese
0.5 oz Part-skim mozzarella cheese
1 cup Baby spinach
0.5 tsp Olive oil
0.25 tsp Dried oregano
0.25 tsp Garlic powder
0.13 tsp Sea salt
0.13 tsp Black pepper
PREPARATION
Preheat your oven to 375°F.
Cook the chickpea ziti in a pot of boiling water for 2 minutes less than the package directions to keep it firm.
Heat the olive oil in a skillet over medium-high heat and brown the ground turkey until fully cooked.
Add the dried oregano, garlic powder, sea salt, and black pepper to the turkey and stir to combine.
Add the baby spinach to the skillet and sauté until the leaves are just wilted.
Pour the marinara sauce into the skillet and simmer the mixture for 3 minutes.
Toss the cooked pasta with the meat and spinach sauce, then transfer the mixture into a small baking dish.
Dollop the ricotta cheese over the top and swirl it slightly into the pasta, then sprinkle with mozzarella.
Bake for 15 minutes until the cheese is golden and bubbling.
