Seared Salmon with Roasted Broccoli and Herb-Cauliflower Mash
Pan-seared salmon served over a creamy cauliflower mash with roasted broccoli, finished with a squeeze of lemon and fresh dill for a bright, zesty finish.
INGREDIENTS
6 oz Salmon Fillet
1.5 cups Broccoli Florets
1.5 cups Cauliflower florets
2 tbsp Non-fat Greek Yogurt
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
Fresh dill and lemon for garnish
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the broccoli florets with half of the olive oil and a pinch of salt, then roast for 15-20 minutes until the edges are slightly charred.
While the broccoli roasts, steam the cauliflower florets until very tender, about 10-12 minutes.
Drain the cauliflower well and blend or mash with the Greek yogurt, minced garlic, and fresh dill until smooth and creamy.
Season the salmon fillet with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side down in the pan and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until desired doneness.
Plate the salmon over the cauliflower mash with the roasted broccoli on the side, finishing with a fresh squeeze of lemon juice.
