PREPARATION
Heat the avocado oil in a medium non-stick skillet over medium-high heat until shimmering.
Add the chopped turkey and baby spinach to the pan, sautéing for 1-2 minutes until the spinach is wilted.
Remove the turkey and spinach from the pan and set them aside on a plate.
Pour the egg whites into the same hot skillet, swirling to ensure they cover the bottom in a thin, even layer.
Allow the egg whites to cook undisturbed for 2-3 minutes until the edges are golden-brown and begin to lift from the pan.
Place the sautéed turkey, spinach, and crumbled feta onto one half of the omelette.
Carefully fold the other half of the omelette over the filling and cook for another 30-60 seconds to warm through.
