Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served over creamy mashed sweet potato with garlic green beans and a zesty squeeze of lemon.
INGREDIENTS
6.5 oz Wild Atlantic Salmon
60g Sweet Potato
100g Green Beans
0.5 tsp Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in a small pot of water until fork-tender.
Drain the potatoes and mash them until smooth, adding a pinch of sea salt if desired.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4 to 5 minutes until a golden-brown crust forms.
Flip the salmon and cook for an additional 2 to 3 minutes until the internal temperature reaches your preference.
Remove the salmon from the pan and set aside to rest.
Add the green beans and minced garlic to the same skillet with a tablespoon of water.
Sauté the beans for about 4 minutes until they are crisp-tender and the garlic is fragrant.
Plate the sweet potato mash, top with the seared salmon, and serve alongside the garlic green beans.
