INGREDIENTS
6 ounces Wild Atlantic Salmon
1.5 cups Cauliflower Florets
1 cup Green Beans
3 tablespoons Nonfat Plain Greek Yogurt
1.5 teaspoons Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket to cook until bright green and snappy.
While vegetables steam, pat the salmon dry with a paper towel and season with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon skin-side up for 4 minutes, then flip and cook for another 3-4 minutes until desired doneness.
Transfer the steamed cauliflower to a bowl or food processor, add the Greek yogurt and minced garlic, and mash or pulse until smooth and creamy.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve the steamed green beans on the side.
