2 cups Cauliflower florets
1 cup Green Beans
1 tbsp Ghee
2 tbsp Non-Fat Greek Yogurt
0.5 tbsp Extra Virgin Olive Oil
1 clove Garlic
1 tbsp Lemon Juice
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
While cauliflower steams, steam the green beans for 5-6 minutes until crisp-tender, then toss with olive oil and a pinch of salt.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat ghee in a cast-iron skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes until crispy.
