In a small bowl, combine the ground turkey, dried sage, onion powder, garlic powder, and half of the sea salt and black pepper.
Form the turkey mixture into a flat patty slightly wider than the biscuit.
Heat a non-stick skillet over medium-high heat and add half of the ghee. Sear the turkey patty for 3-4 minutes per side until cooked through and golden brown.
In another bowl, whisk together the whole egg, egg whites, and the remaining salt and pepper.
Wipe the skillet clean, add the remaining ghee over medium heat, and pour in the egg mixture. Let it set slightly, then fold it into a square shape to fit the biscuit.
Slice the whole wheat biscuit in half and toast until lightly crisp.
Place the turkey sausage patty on the bottom half of the biscuit, top with the folded eggs and the slice of sharp cheddar cheese.
Place the top half of the biscuit on the cheese and let it sit for 30 seconds to allow the cheese to melt before serving.
