Seared Salmon with Steamed Broccoli and Garlic Cauliflower Mash
Pan-seared salmon fillet served over a creamy garlic cauliflower mash with a side of vibrant steamed broccoli, finished with a squeeze of zesty lemon.
INGREDIENTS
6 oz Salmon Fillet
1.5 cups Broccoli Florets
2 cups Cauliflower florets
2 tbsp Nonfat Plain Greek Yogurt
2 tsp Extra Virgin Olive Oil
2 cloves Garlic
PREPARATION
Place cauliflower florets and peeled garlic cloves in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
In the last 5 minutes of steaming the cauliflower, add the broccoli florets to the steamer basket and cook until bright green and crisp-tender.
Transfer the steamed cauliflower and garlic to a food processor or bowl; add the Greek yogurt and a pinch of salt and pepper, then blend or mash until creamy and smooth.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until the fish is opaque and flakes easily with a fork.
Plate the garlic cauliflower mash, top with the seared salmon, and serve alongside the steamed broccoli.
