Seared Salmon Fillet with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served with garlic-infused cauliflower mash and crisp steamed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6 oz Salmon Fillet
1.5 cups Cauliflower florets
1 cup Green Beans
2 tbsp Nonfat Greek Yogurt
2 tsp Olive Oil
1 clove Garlic
PREPARATION
Steam the cauliflower florets and the whole garlic clove in a steamer basket over boiling water until very tender, about 10 to 12 minutes.
During the last 5 minutes of cauliflower steaming, add the green beans to the steamer basket and cook until they are vibrant green and crisp-tender.
Pat the salmon fillet completely dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat until shimmering.
Place the salmon in the pan skin-side down and sear for 4 to 5 minutes until the skin is golden, then flip and cook for another 2 to 3 minutes until opaque.
Transfer the steamed cauliflower and garlic to a bowl and mash thoroughly with the Greek yogurt and the remaining teaspoon of olive oil until creamy.
Plate the salmon alongside the garlic mashed cauliflower and steamed green beans, serving with a fresh lemon wedge if desired.
