Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon served with garlicky green beans and nutty brown rice, finished with a squeeze of lemon and a sprinkle of crisp sea salt.
INGREDIENTS
6.5 oz Wild Atlantic Salmon
0.5 cup cooked Brown Rice
1 cup fresh Green Beans
2 tsp Avocado Oil
1 clove Garlic
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat one teaspoon of avocado oil in a medium non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for about 4 to 5 minutes until the skin is golden and crisp.
Carefully flip the fillet and cook for another 2 to 3 minutes until the salmon is cooked through to your preference, then transfer to a plate.
Wipe out the skillet and add the remaining teaspoon of avocado oil along with the minced garlic.
Add the green beans to the pan with a tablespoon of water and cover with a lid to steam-sauté for 4 to 5 minutes until tender-crisp.
Remove the lid and sauté for one more minute until the water has evaporated and the beans are lightly browned.
Serve the seared salmon alongside the garlic green beans and the warm cooked brown rice, finishing with a fresh squeeze of lemon juice.
