Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon fillet served with garlic green beans and brown rice, finished with a squeeze of zesty lemon.
INGREDIENTS
6.5 oz Wild Atlantic Salmon Fillet
0.5 cup Cooked Brown Rice
1 cup Fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Fresh Garlic
1 tbsp Fresh Lemon Juice
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat half of the olive oil in a medium non-stick skillet over medium-high heat until shimmering.
Place the salmon in the skillet skin-side up and sear for 4 to 5 minutes until a golden crust forms and it releases easily from the pan.
Flip the fillet and continue cooking for 3 to 4 minutes until the salmon is just opaque and flakes easily with a fork.
Transfer the salmon to a plate and add the remaining olive oil to the same skillet.
Add the minced garlic and green beans to the pan, sautéing for about 5 minutes until the beans are tender-crisp.
Serve the seared salmon over the warm brown rice with the garlic green beans on the side and a fresh squeeze of lemon juice over the fish.
