200g Sweet Potato
40g Avocado
1 tsp Extra Virgin Olive Oil
1/4 cup Fresh Cilantro
1 clove Garlic
PREPARATION
Preheat your oven to 400°F (200°C).
Rub the chicken breast with half of the olive oil, minced garlic, dried rosemary, thyme, salt, and pepper.
Place the chicken on a baking sheet and roast for 20-25 minutes until the internal temperature reaches 165°F.
While the chicken roasts, peel and cube the sweet potato, then boil in water for 10-12 minutes until tender.
Drain the sweet potatoes and mash them thoroughly, stirring in the chopped fresh cilantro and the remaining half teaspoon of olive oil.
Slice the avocado into thin wedges.
Serve the roasted chicken over the sweet potato mash and top with the fresh avocado slices.
