Ground Beef Stuffed Bell Peppers
Tender bell peppers oven-roasted with a savory ground beef and herb filling, finished with a vibrant tomato sauce and a sprinkle of sharp parmesan.
INGREDIENTS
7 oz Ground beef (93% lean)
2 medium Bell peppers
0.25 cup Cooked brown rice
0.5 cup Tomato sauce
1 tsp Extra virgin olive oil
1 tbsp Grated parmesan cheese
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Dried oregano
1 medium Garlic clove
PREPARATION
Preheat your oven to 375°F (190°C).
Slice the tops off the bell peppers and carefully remove the seeds and membranes from the inside.
In a large skillet over medium heat, add the olive oil and sauté the minced garlic until fragrant, about 1 minute.
Add the ground beef to the skillet along with the sea salt, black pepper, and dried oregano. Cook until the beef is fully browned, then drain any excess liquid.
Stir the cooked brown rice and half of the tomato sauce into the beef mixture until well combined.
Stand the bell peppers upright in a baking dish and fill each one generously with the beef and rice mixture.
Spoon the remaining tomato sauce over the top of the filling in each pepper.
Bake for 30 to 35 minutes until the peppers are tender when pierced with a fork.
Sprinkle with grated parmesan cheese and let cool for 5 minutes before serving.
