Seared Salmon with Steamed Green Beans and Cauliflower Mash
Pan-seared salmon served over creamy cauliflower mash with steamed green beans, finished with a squeeze of lemon and fragrant fresh dill.
INGREDIENTS
7.5 oz Wild Atlantic Salmon fillet
1.5 cups Cauliflower florets
1 cup fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 tsp Ghee
1/2 tsp Garlic powder
Salt and black pepper to taste
Fresh dill and lemon wedges for serving
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
Transfer the steamed cauliflower to a blender or food processor with the ghee, garlic powder, and a pinch of salt, blending until completely smooth and creamy.
Steam the green beans for 5-6 minutes until they are vibrant green and crisp-tender.
Pat the salmon fillet completely dry with a paper towel and season both sides with salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes on the first side to develop a golden crust, then flip and cook for another 2-3 minutes until cooked to your preference.
Plate the cauliflower mash first, top with the seared salmon, and serve the green beans on the side with a squeeze of fresh lemon and a sprinkle of fragrant dill.
