Slow-Cooker Honey Garlic Chicken
Chicken breast slow-cooked in a sticky honey-garlic glaze until tender, served over fluffy jasmine rice with a side of vibrant steamed broccoli.
INGREDIENTS
5.5 oz chicken breast
1 tbsp honey
1.5 tbsp tamari
2 cloves garlic
1 tsp fresh ginger
0.5 tsp sesame oil
0.5 cup cooked jasmine rice
1 cup broccoli florets
0.5 tsp cornstarch
0.25 tsp red pepper flakes
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Place the chicken breast in the slow cooker pot.
In a small bowl, whisk together the honey, tamari, minced garlic, grated ginger, sesame oil, and red pepper flakes.
Pour the sauce mixture over the chicken and season with sea salt and black pepper.
Cover and cook on low for 4-5 hours or on high for 2-3 hours until the chicken is cooked through and easily shreds.
Remove the chicken from the pot, shred or dice it into bite-sized pieces, and return it to the slow cooker.
In a small ramekin, whisk the cornstarch with one teaspoon of water to create a slurry, then stir it into the sauce to thicken.
Steam the broccoli florets separately until they are bright green and crisp-tender.
Serve the glazed honey garlic chicken over the warm jasmine rice with the steamed broccoli on the side.
