PREPARATION
Peel and cube the yellow potato, then place in a pot of boiling water for 12-15 minutes until fork-tender.
While the potato cooks, season the chicken breast evenly with half of the sea salt, black pepper, and all of the dried oregano.
Heat the olive oil in a skillet over medium heat and sear the chicken for 6-7 minutes per side until the internal temperature reaches 165°F.
Drain the cooked potatoes and return them to the warm pot.
Add the ghee, minced garlic, and Greek yogurt to the potatoes, mashing thoroughly until the texture is smooth and creamy.
Stir in the freshly chopped chives and the remaining sea salt and black pepper.
