Seared Salmon Fillet with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served over a velvety sweet potato mash with garlic-sautéed green beans, finished with a bright squeeze of lemon.
INGREDIENTS
6.5 oz Salmon Fillet
150g Sweet Potato
1 cup Green Beans
1 tsp Olive Oil
1 clove Garlic
1 tsp Lemon Juice
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water until tender, approximately 12 minutes.
Drain the potatoes and mash them until smooth, adding a splash of hot water or a pinch of salt if needed for consistency.
Pat the salmon fillet dry and season with a pinch of salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until cooked through and golden.
Remove the salmon and add the remaining oil to the skillet to sauté the green beans and minced garlic for 3-4 minutes until tender-crisp.
Serve the salmon over the sweet potato mash with the garlic green beans on the side and a fresh squeeze of lemon juice.
