150g Cauliflower florets
60g Fresh Spinach
2 cloves Garlic
1.5 tsp Avocado Oil
1 tbsp Nonfat Greek Yogurt
PREPARATION
Steam cauliflower florets until very tender and soft.
Mash the steamed cauliflower with Greek yogurt and a pinch of salt until the texture is velvety.
Heat half of the avocado oil in a large skillet over medium-high heat.
Season the salmon with salt and pepper then sear for 4-5 minutes per side until the skin is crispy and the fish is cooked through.
Remove the salmon from the pan and add the remaining oil and minced garlic.
Sauté the garlic for 30 seconds before adding the spinach and cooking until just wilted.
Serve the seared salmon over the cauliflower mash with the garlicky spinach on the side.
