Ground Beef and Sweet Potato Skillet
Sautéed lean ground beef and tender sweet potato cubes are seasoned with smoky spices and tossed with crisp bell peppers for a vibrant, one-pan meal.
INGREDIENTS
6 oz Ground beef (93% lean)
1 medium Sweet potato
0.5 medium Yellow onion
1 medium Red bell pepper
0.25 tsp Extra virgin olive oil
0.5 tsp Garlic powder
0.5 tsp Smoked paprika
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Fresh parsley
PREPARATION
Peel the sweet potato and cut into 1/2-inch cubes.
Finely dice the yellow onion and the red bell pepper.
Heat the extra virgin olive oil in a large cast-iron or non-stick skillet over medium-high heat.
Add the sweet potato cubes to the skillet and sauté for 8-10 minutes, stirring occasionally, until they are tender and caramelized on the edges.
Push the potatoes to one side of the pan and add the ground beef and diced onion to the empty space.
Cook the beef for 5-6 minutes, breaking it apart with a wooden spoon, until it is fully browned and the onions are translucent.
Stir the sweet potatoes back into the beef mixture and add the diced red bell pepper.
Season the entire skillet with garlic powder, smoked paprika, sea salt, and black pepper.
Continue to cook for 3-4 minutes until the bell peppers are tender-crisp and the flavors have melded.
Remove from heat and garnish with freshly chopped parsley before serving.
