120g Sweet Potato
100g Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced

PREPARATION
Peel and cube the sweet potato, then boil in a pot of water until tender, approximately 10 to 12 minutes.
Drain the sweet potatoes and mash them until smooth, adding a pinch of sea salt if desired.
Heat half of the olive oil in a non-stick skillet over medium heat and sauté the green beans and minced garlic until the beans are crisp-tender, about 5 minutes.
Remove the green beans from the skillet and set aside.
Add the remaining olive oil to the same skillet and increase the heat to medium-high.
Season the salmon fillet with salt and pepper, then place it in the skillet skin-side up.
Sear the salmon for 4 to 5 minutes per side until the exterior is golden and the fish is cooked through.
