Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon and garlic-sautéed green beans served over nutty brown rice with a bright, zesty finish.
INGREDIENTS
7.2 oz Wild Atlantic Salmon
0.5 cup Cooked Brown Rice
1.5 cups Fresh Green Beans
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tbsp Fresh Lemon Juice
PREPARATION
Pat the salmon fillet dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until desired doneness.
Remove the salmon from the pan and set aside to rest.
In the same pan, add the remaining olive oil along with the green beans and minced garlic.
Sauté the green beans for 5-6 minutes until they are tender-crisp and the garlic is fragrant.
Warm the pre-cooked brown rice and place it on a plate.
Top the rice with the seared salmon and side of green beans, then drizzle everything with fresh lemon juice before serving.
