PREPARATION
Pat the chicken thighs completely dry with paper towels to ensure a proper sear.
Season both sides of the chicken evenly with sea salt, black pepper, and dried thyme.
Heat the ghee in a large cast-iron or stainless steel skillet over medium-high heat until shimmering.
Place the chicken thighs in the skillet and sear undisturbed for 5 to 7 minutes until a golden-brown crust forms.
