150g Sweet Potato
100g Green Beans
1.5 tsp Olive Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water until fork-tender.
Drain the sweet potatoes and mash them until smooth, seasoning with a pinch of sea salt.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until the fish is opaque and flakes easily.
Remove the salmon from the pan and set aside.
Add the remaining olive oil to the same skillet along with the green beans and minced garlic.
Sauté the beans for 5 minutes until they are tender-crisp and the garlic is fragrant.
Plate the sweet potato mash, top with the seared salmon, and serve the garlic green beans on the side with a fresh lemon wedge.
