100 grams Green Beans

PREPARATION
Peel and cube the sweet potato, then boil in a pot of water until tender, about 10 to 12 minutes.
Drain the sweet potato and mash until smooth, seasoning with a pinch of sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon skin-side down for 4 to 5 minutes until the skin is crispy.
Flip the salmon fillet and cook for another 2 to 3 minutes until the fish is opaque and flakes easily with a fork.
Remove the salmon from the pan and add the remaining olive oil, green beans, and minced garlic to the same skillet.
