Sourdough Avocado Halloumi Egg Toast
Golden pan-seared halloumi and fluffy scrambled eggs served over thick-cut toasted sourdough with a creamy, citrus-spiked avocado mash.
INGREDIENTS
1 slice sourdough bread
2 large eggs
0.5 cup liquid egg whites
2 oz halloumi cheese
0.25 whole avocado
0.25 tsp sea salt
0.25 tsp black pepper
0.25 tsp red pepper flakes
1 tsp lemon juice
1 tbsp fresh chives
PREPARATION
Slice the halloumi cheese into 1/4-inch thick rectangles.
In a medium bowl, whisk together the whole eggs and liquid egg whites until the mixture is uniform and slightly frothy.
Heat a non-stick skillet over medium-high heat. Place the halloumi slices in the dry pan and sear for 2 minutes per side until deeply golden and crispy. Remove from the pan and set aside.
Reduce the skillet heat to medium-low. Pour in the egg mixture and scramble gently using a silicone spatula, moving the eggs constantly until they are just set and fluffy. Season with half of the sea salt and black pepper.
Toast the sourdough slice until golden brown and crisp.
In a small bowl, mash the avocado with the lemon juice and the remaining sea salt and black pepper until smooth.
Spread the avocado mash evenly across the toasted sourdough. Layer the fluffy scrambled eggs on top, followed by the seared halloumi slices.
Garnish the toast with red pepper flakes and freshly chopped chives before serving immediately.
