Bacon-Cheddar Stuffed Baked Potatoes
Russet potatoes baked until tender and stuffed with savory ground turkey, crispy bacon, and sharp cheddar for a creamy, satisfying meal.
INGREDIENTS
1 medium Russet potato
2 oz 93% lean ground turkey
1 slice center-cut bacon
0.25 oz sharp cheddar cheese
0.25 cup non-fat Greek yogurt
1 tbsp chopped green onions
0.25 tsp sea salt
0.25 tsp black pepper
0 tsp extra virgin olive oil
PREPARATION
Preheat your oven to 400°F (200°C).
Scrub the potato clean, pierce it several times with a fork, rub with olive oil and sea salt, then bake directly on the oven rack for 45 to 60 minutes until the skin is crisp and the inside is soft.
While the potato bakes, cook the bacon in a skillet over medium heat until crispy; remove, drain on paper towels, and chop into bits.
In the same skillet, cook the ground turkey until browned and fully cooked, seasoning with the black pepper.
Once the potato is done, slice it open lengthwise and carefully scoop out most of the flesh into a bowl, leaving a thin shell.
Mash the potato flesh with the Greek yogurt and half of the cheddar cheese until smooth.
Fold the cooked ground turkey into the potato mixture and spoon it back into the potato shell.
Top with the chopped bacon and the remaining cheddar cheese, then return to the oven for 5 minutes until the cheese is melted.
Garnish with fresh green onions before serving.
