7 oz Wild Atlantic Salmon Fillet
2 cups Cauliflower Florets
1 cup Fresh Green Beans
1 tbsp Ghee
2 cloves Garlic
1 tsp Lemon Juice
PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
During the last 5 minutes of the cauliflower steaming, add the green beans to a separate steamer or the same basket to cook until crisp-tender.
Pat the salmon fillet completely dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat half of the ghee in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes on the first side until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until it reaches your desired level of doneness.
Transfer the steamed cauliflower to a bowl or food processor and blend with the remaining ghee, minced garlic, and lemon juice until smooth and creamy.
Plate the garlic mashed cauliflower first, top with the seared salmon, and serve the green beans on the side.
