PREPARATION
Boil red lentils in water or low-sodium broth until very soft, then drain any excess liquid and mash with a fork until silky.
Trim the ends of the green beans and mince the garlic cloves.
Heat half of the olive oil in a skillet over medium heat, add the green beans and garlic, and sauté until the beans are tender-crisp.
Season the salmon fillet with a pinch of sea salt and black pepper.
Heat the remaining olive oil in a separate non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until the center is flaky.
