2 links Turkey Sausage
1 cup Fresh Spinach

1/3 Avocado
1 slice Sprouted Grain Bread
PREPARATION
Heat a non-stick skillet over medium heat and lightly coat with half of the olive oil.
Brown the turkey sausage links until cooked through, then slice into rounds.
Sauté the fresh spinach in the same pan until just wilted, then remove and set aside with the sausage.
Wipe the pan and add the remaining olive oil.
Pour in the egg whites and cook undisturbed until the edges start to set.
Gently lift the edges and tilt the pan to let uncooked egg flow underneath.
Once the top is nearly set, place the spinach and sausage on one half of the omelette.
