Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over a creamy cauliflower mash with garlic-sautéed green beans, finished with a squeeze of lemon for a bright, zesty finish.
INGREDIENTS
6 oz Salmon Fillet
1.5 cups Cauliflower florets
1 cup Green Beans
2 tbsp Nonfat Plain Greek Yogurt
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
Transfer the steamed cauliflower to a blender or food processor, add the Greek yogurt and a pinch of salt, and process until smooth and creamy.
While the cauliflower steams, trim the green beans and mince the garlic.
Heat a non-stick skillet over medium-high heat with half of the olive oil.
Season the salmon with salt and pepper, then place it in the skillet skin-side down.
Sear the salmon for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes to your desired doneness.
Remove the salmon from the pan and add the remaining oil, green beans, and minced garlic.
Sauté the green beans for 3-5 minutes until they are bright green and crisp-tender.
Plate the cauliflower mash, top with the seared salmon, and serve the garlic green beans on the side.
