PREPARATION
In a medium bowl, combine the diced chicken breast with Greek yogurt, lemon juice, turmeric, and half of the garam masala to marinate for at least 20 minutes.
Heat the ghee in a large skillet over medium-high heat and sear the marinated chicken until golden brown on all sides, then remove and set aside.
In the same skillet, sauté the diced yellow onion, minced garlic, and grated ginger until the onion is translucent and fragrant.
Stir in the tomato puree, cumin, remaining garam masala, sea salt, and black pepper, then let the sauce simmer for 5 minutes.
Return the chicken to the skillet and continue to simmer for another 5 to 7 minutes until the sauce has thickened and the chicken is fully cooked.
