1 tbsp Ghee
2 cloves Garlic
1 sprig Rosemary
1 sprig Thyme
10 spears Asparagus
1 tsp Olive oil
0.5 tsp Sea salt
0.5 tsp Black pepper
PREPARATION
Preheat your oven to 400°F and prepare a baking sheet.
Toss the asparagus spears with olive oil and a portion of the sea salt and black pepper on the baking sheet.
Roast the asparagus for 10-12 minutes until tender and slightly charred.
While asparagus roasts, season the sirloin steak generously on both sides with the remaining sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat and sear the steak for 3-4 minutes per side for medium-rare.
Reduce the heat to medium and add the ghee, smashed garlic cloves, rosemary, and thyme to the skillet.
Tilt the pan and spoon the melting herb-infused ghee over the steak for 1-2 minutes.
