Seared Salmon with Garlic Spinach and Sweet Potato Mash
Pan-seared salmon served over mashed sweet potatoes and garlicky sautéed spinach, finished with a squeeze of lemon for a bright, citrusy zing.
INGREDIENTS
6 oz Salmon Fillet
1 large Sweet Potato
2 cups Fresh Spinach
1.5 tbsp Olive Oil
2 cloves Garlic
PREPARATION
Peel the sweet potato and cut into 1-inch cubes.
Place potatoes in a pot of boiling water and cook for 12-15 minutes until tender.
Drain the potatoes and mash them with 0.5 tablespoon of olive oil and a pinch of salt until smooth and creamy.
Season the salmon fillet with salt and pepper on both sides.
Heat 0.5 tablespoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through.
In a separate pan, heat the remaining 0.5 tablespoon of olive oil over medium heat.
Add the minced garlic and sauté for 30 seconds until fragrant.
Add the spinach to the pan and toss until just wilted.
Plate the sweet potato mash, top with the garlic spinach, and place the seared salmon on top.
