Stir Fried Salmon with Broccoli and Snap Peas
Stir-fried wild salmon cubes tossed with broccoli and snap peas in a savory ginger-garlic sauce, finished with a drizzle of toasted sesame oil.
INGREDIENTS
5.3 oz Wild Atlantic Salmon
1 cup Broccoli florets
1 cup Sugar Snap Peas
1 tsp Avocado Oil
1 tsp Toasted Sesame Oil
1 tbsp Coconut Aminos
1 clove Garlic, minced
1 tsp Fresh Ginger, grated
PREPARATION
Cut the salmon into 1-inch cubes and season lightly with a pinch of sea salt.
Heat the avocado oil in a large skillet or wok over medium-high heat until shimmering.
Add the salmon cubes to the pan and sear for 2-3 minutes until golden on the edges, then remove the salmon and set aside.
In the same pan, add the broccoli florets and snap peas with a tablespoon of water, then cover with a lid for 2 minutes to steam-soften.
Remove the lid and add the minced garlic and grated ginger, sautéing for 30 seconds until fragrant.
Return the salmon to the pan and pour in the coconut aminos and toasted sesame oil.
Toss everything together for 1 minute until the sauce is well-combined and the salmon is cooked through.
