Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon fillet served over brown rice with sautéed garlic green beans, finished with a squeeze of bright lemon.
INGREDIENTS
7.3 oz Wild Atlantic Salmon
0.5 cup Cooked Brown Rice
1 cup Green Beans
1 tsp Extra Virgin Olive Oil
2 cloves Garlic
1 tbsp Lemon Juice
0.25 tsp Sea Salt
0.25 tsp Black Pepper
PREPARATION
Prepare the brown rice according to package directions and set aside.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4 to 5 minutes until the skin is golden and crispy.
Flip the salmon carefully and cook for an additional 2 to 3 minutes until the fish is just opaque and flakes easily.
Remove the salmon from the pan and let it rest on a plate.
In the same skillet, add the minced garlic and green beans, sautéing for about 5 minutes until they are bright green and crisp-tender.
Plate the brown rice and top with the seared salmon and garlic green beans.
Drizzle fresh lemon juice over the entire dish before serving.
