Garlic Herb-Crusted Beef Roast
Lean beef roast seared and oven-finished with a fragrant garlic-herb crust, served alongside tender roasted carrots and crisp green beans.
INGREDIENTS
5.25 oz lean beef top sirloin roast
1 tsp extra virgin olive oil
2 cloves garlic
1 tsp fresh rosemary
1 tsp fresh thyme
0.25 tsp sea salt
0.25 tsp black pepper
0.5 cup carrots
1 cup green beans
PREPARATION
Preheat your oven to 400°F (200°C).
In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, sea salt, black pepper, and half of the olive oil to create a thick herb paste.
Pat the beef roast dry with a paper towel and rub the garlic-herb paste evenly over all sides of the meat.
Toss the sliced carrots and trimmed green beans with the remaining olive oil and a small pinch of salt.
Place the beef in the center of a roasting pan or a large cast-iron skillet and surround it with the prepared vegetables.
Roast in the oven for 20-25 minutes, or until the beef reaches an internal temperature of 135°F for medium-rare.
Remove from the oven and transfer the beef to a cutting board; let it rest for 10 minutes to lock in the juices.
Slice the beef thinly against the grain and serve alongside the roasted vegetables.
