Ground Beef Stuffed Bell Peppers
Oven-roasted bell peppers stuffed with savory ground beef and cauliflower rice, simmered in a zesty tomato sauce until the filling is perfectly tender and fragrant.
INGREDIENTS
4 oz 93% lean ground beef
2 large bell peppers
0.5 cup yellow onion
0.5 cup zucchini
1 cup cauliflower rice
0.5 cup tomato puree
0.5 tsp extra virgin olive oil
1 tbsp parmesan cheese
0.5 tsp garlic powder
0.5 tsp dried oregano
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Preheat your oven to 375°F (190°C).
Slice the tops off the bell peppers and remove the seeds and membranes.
In a large skillet over medium-high heat, add the extra virgin olive oil and brown the ground beef until cooked through.
Add the diced yellow onion and zucchini to the skillet, sautéing for 5 minutes until softened.
Stir in the cauliflower rice, tomato puree, garlic powder, dried oregano, sea salt, and black pepper, letting it simmer for 3 minutes.
Spoon the beef and vegetable mixture into the hollowed bell peppers and place them upright in a baking dish.
Sprinkle the tops of the stuffed peppers with parmesan cheese.
Cover the baking dish with foil and bake for 30 minutes.
Remove the foil and bake for another 10 minutes until the peppers are tender and the cheese is lightly golden.
