Ground Beef Stuffed Bell Peppers
Lean ground beef and aromatic herbs simmered in a rich tomato sauce, baked inside vibrant bell peppers until they reach a tender, caramelized finish.
INGREDIENTS
8 oz Ground beef (93% lean)
2 whole Bell peppers
0.25 tbsp Extra virgin olive oil
0.25 cup Yellow onion
1 clove Garlic
0.5 cup Tomato puree
0.5 tsp Dried oregano
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 375°F (190°C).
Slice the tops off the bell peppers and remove the seeds and membranes from the inside.
In a large skillet over medium heat, add the olive oil and sauté the diced yellow onion and minced garlic until translucent and fragrant.
Add the ground beef to the skillet, breaking it up with a spatula, and cook until fully browned.
Stir in the tomato puree, dried oregano, sea salt, and black pepper, allowing the mixture to simmer for 3-5 minutes.
Place the bell peppers upright in a baking dish and spoon the beef mixture evenly into each pepper cavity.
Pour a small amount of water into the bottom of the dish to create steam, then cover with foil.
Bake for 30 minutes, then remove the foil and bake for an additional 5-10 minutes until the peppers are tender and slightly caramelized on the edges.
