PREPARATION
Preheat your oven to 375°F (190°C) and lightly grease a small oven-safe baking dish.
Cut the sprouted grain bread into 1-inch cubes and distribute them evenly in the bottom of the dish.
In a medium mixing bowl, whisk together the egg whites, whole egg, Greek yogurt, maple syrup, cinnamon, vanilla, and sea salt until the custard is smooth.
Pour the custard mixture over the bread cubes, using a spoon to press the bread down so every piece is thoroughly soaked.
