Turkey and Sweet Potato Cottage Pie
Savory ground turkey and tender vegetables simmered in a rich herb gravy, topped with a velvety sweet potato and cottage cheese mash.
INGREDIENTS
6 oz Ground turkey
1 medium Sweet potato
0.5 cup Cottage cheese
1 tsp Extra virgin olive oil
0.25 cup Yellow onion
0.25 cup Carrots
0.25 cup Frozen peas
1 clove Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Dried thyme
1 tbsp Tomato paste
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water for 12-15 minutes until fork-tender.
While the potato boils, heat olive oil in a skillet over medium heat and sauté the onion, carrots, and minced garlic until softened.
Add the ground turkey to the skillet, breaking it apart with a spatula, and cook until browned and no longer pink.
Stir in the tomato paste, dried thyme, sea salt, black pepper, and frozen peas, allowing the flavors to meld for 3 minutes.
Drain the sweet potatoes and transfer them to a bowl; add the cottage cheese and mash until the mixture is smooth and creamy.
Spread the turkey mixture into a small baking dish and top with an even layer of the sweet potato mash.
Place under a broiler for 3-5 minutes until the top is lightly golden and the edges are bubbling.
