Sweet Potato Beef Hash with Poached Egg
Sautéed extra-lean ground beef and mashed sweet potato folded with fluffy egg whites, topped with a velvety poached egg for a savory morning start.
INGREDIENTS
80 g 96% Lean ground beef (2.8 oz)
50 g Sweet potato (1.7 oz)
225 g Liquid egg whites (7.9 oz)
1 large egg
30 g Fresh baby spinach (1 oz)
0.25 tsp Garlic powder
0.25 tsp Onion powder
0.13 tsp Sea salt
0.13 tsp Black pepper
1 tsp Apple cider vinegar
PREPARATION
Peel and dice the sweet potato, then steam or boil until tender.
Mash the cooked sweet potato in a small bowl and set aside.
In a non-stick skillet over medium-high heat, brown the lean ground beef until fully cooked.
Stir the mashed sweet potato, garlic powder, onion powder, salt, and pepper into the beef.
Pour the liquid egg whites into the skillet with the beef mixture and scramble until the whites are fully set.
Fold in the fresh baby spinach and cook until just wilted.
In a separate small pot, bring water and apple cider vinegar to a gentle simmer.
Carefully crack the whole egg into the simmering water and poach for 3 minutes until the white is opaque.
Plate the beef and potato hash and top with the warm poached egg.
