5.8 oz Wild-Caught Salmon Fillet
300g Sweet Potato
1.5 cups Green Beans
1.5 tbsp Extra Virgin Olive Oil
0.5 tbsp Ghee
2 cloves Garlic, minced
PREPARATION
Peel and cube the sweet potato, then boil in salted water until tender, about 12-15 minutes.
Drain the sweet potato and mash with the ghee and a pinch of sea salt until smooth and creamy.
Heat half of the olive oil in a skillet over medium heat and sauté the green beans with the minced garlic until tender-crisp.
Season the salmon fillet with sea salt and black pepper.
In a separate non-stick skillet, heat the remaining olive oil over medium-high heat.
Place the salmon skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until the center is just opaque.
