Seared Salmon Fillet with Herb-Cauliflower Mash and Steamed Green Beans
Pan-seared salmon served over a creamy, herb-flecked cauliflower mash with a side of snappy steamed green beans.
INGREDIENTS
7.5 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Green Beans
40g Nonfat Greek Yogurt
1 tsp Olive Oil
0.5 tsp Ghee
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water for about 10-12 minutes until very tender.
While the cauliflower steams, season the salmon fillet with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet and sear for 4 to 5 minutes per side until the exterior is golden and the center is cooked to your preference.
Steam the green beans for 5 minutes until they are bright green and snappy.
Transfer the steamed cauliflower to a bowl and mash thoroughly with the Greek yogurt, ghee, and fresh herbs of your choice until smooth.
Serve the seared salmon atop the cauliflower mash with the steamed green beans on the side.
