8.5 oz Beef Sirloin Strips
250g Cauliflower Florets
150g Green Beans
1 tsp Extra Virgin Olive Oil
2 tbsp Non-fat Plain Greek Yogurt
1 clove Garlic, minced
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket to cook until bright green and crisp.
Transfer the steamed cauliflower to a food processor or bowl, add the Greek yogurt and minced garlic, and blend or mash until smooth and creamy.
Heat the olive oil in a large skillet over medium-high heat.
Season the beef strips with salt and pepper, then add them to the hot skillet in a single layer.
Sear the beef for 2-3 minutes per side until browned and cooked to your desired level of doneness.
Plate the cauliflower mash and top with the seared beef strips, serving the steamed green beans on the side.
