Sesame Tofu Stir-Fry with Mixed Vegetables
Crispy pan-seared tofu and vibrant garden vegetables tossed in a savory ginger-sesame glaze for a meal that is incredibly fragrant.
INGREDIENTS
8 oz Extra-firm tofu
0.5 cup Shelled edamame
1 cup Broccoli florets
1 cup Red bell pepper strips
0.25 tsp Toasted sesame oil
1 tbsp Tamari
1 tsp Fresh ginger
1 clove Garlic
0.5 tsp Sesame seeds
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Drain and press the extra-firm tofu for 15 minutes to remove excess moisture, then cut into 1-inch cubes.
Heat the toasted sesame oil in a large non-stick skillet or wok over medium-high heat.
Add the tofu cubes to the skillet and sear for 8-10 minutes, turning occasionally until all sides are golden and crispy.
Remove the tofu from the pan and set aside; add the broccoli florets, red bell pepper strips, and shelled edamame to the same pan.
Sauté the vegetables for 5-6 minutes until tender-crisp, then stir in the minced garlic and grated ginger for 1 minute.
Return the tofu to the pan, drizzle with tamari, and season with sea salt and black pepper.
Toss everything together for 2 minutes to heat through and coat with the sauce.
Serve immediately, garnished with sesame seeds for added crunch.
