Slow Cooker Honey Garlic Chicken
Tender chicken breast slow-cooked in a sticky, aromatic honey-garlic glaze and served over fluffy brown rice with crisp steamed broccoli.
INGREDIENTS
5 oz chicken breast
0.5 tbsp honey
1 tbsp tamari
2 cloves garlic
1 tsp fresh ginger
1 tsp rice vinegar
0.5 tsp sesame oil
0.5 cup cooked brown rice
1 cup broccoli florets
0.25 cup carrots
0.25 tsp red pepper flakes
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Place the chicken breast in the bottom of the slow cooker and season with sea salt and black pepper.
In a small bowl, whisk together the honey, tamari, minced garlic, grated ginger, rice vinegar, sesame oil, and red pepper flakes.
Pour the sauce over the chicken, ensuring it is well coated.
Add the sliced carrots to the slow cooker around the chicken.
Cover and cook on low for 4-5 hours or on high for 2-3 hours until the chicken is tender and easily shreds.
During the last 20 minutes of cooking, place the broccoli florets on top of the chicken to steam until vibrant and tender.
Remove the chicken and shred it with two forks, then toss it back into the slow cooker to absorb the thickened sauce.
Serve the honey garlic chicken and vegetables over the warm cooked brown rice.
